Chicken Noodle Soup with Gluten-Free Goodness

Chicken Noodle Soup

Who doesn’t love a bowl of homemade chicken noodle soup? Especially one with lots and lots of noodles. This is a recipe I put together years ago when I was on a soup kick. Today, I love all things that I can throw in a crock pot or huge kettle for a flavorful taste. I freeze each delicious dish in single serving containers and grab one out for lunch everyday so I have something, not only delicious, but healthy to fuel my body.

INGREDIENTS:
(Serves 12)

2 Tbsp. butter
2 cup organic onion, chopped
2 cups organic celery, chopped
8 (14.5 oz) cans gluten-free chicken broth
2 (14.5 oz) cans gluten-free vegetable broth
1 lb. organic free-range chicken thighs, uncooked, boneless, skinless
2 cup organic carrots, sliced
2 or 4 dashes of poultry seasoning
2 cans gluten-free cream of chicken soup
Garlic pepper
Salt
4 minced garlic cloves
1 tsp. dried oregano
3 cups gluten-free noodles
2 or 4 pinches of dried thyme

DIRECTIONS:
1. BOIL WATER TO COOK EGG NOODLES
2. IN A PAN, SAUTE GARLIC, ONION, CELERY AND CARROTS IN BUTTER OR OIL
3. CHOP CHICKEN INTO BITE SIZE PIECES AND PLACE IN SOUP POT
4. ADD SAUTE VEGETABLES TO SOUP POT
5. ADD CHICKEN BROTH AND REST OF SPICES AND BRING TO BOIL
6. REDUCE HEAT, COVER AND SIMMER 20 MINUTES
7. DRAIN NOODLES AND ADD TO CHICKEN AND VEGETABLES
8. ADD CREAM OF CHICKEN SOUP
9. SIMMER FOR 10 TO 20 MINUTES
