Here’s the recipe y’all have been asking me to share. These are a great treat if you need something sweet without the guilt. Only three ingredients so it doesn’t get any healthier, tastier, or any easier. I super love these fresh out of the refrigerator. They freeze well too! (Serves 12)
1/2 cup almonds
1 lb pitted dates
1 cup unsweetened shredded coconut, chopped
- Place a little almonds into food processor and add a few dates on top. Whir in the food processor until these form a paste. I use my Ninja for this. Repeat until you use all ingredients. I do this a little at a time until all the dates and almonds are mixed into a paste.
- Once paste is mixed it will start to form a ball. Remove from food processor and roll into balls.
- Roll and press thru chopped coconut. While rolling your hands will become sticky due to the sugar in the dates – just rinse your hands with cold water and you will be able to handle the mixture easily again.
- Serve chilled. Store in fridge up to 2 weeks.
