Family Favorite Meatloaf

If you’re looking for a good, healthy recipe for a moist and flavorful meat loaf—you just found it! This recipe is simply fantastic! It’s my second favorite paleo recipe of all time (my first is HERE) with lot of delicious sauce and packed full of healthy ingredients that your body with love! This is another family favorite at our house.

 Family Favorite Meatloaf

 INGREDIENTS FOR MEATLOAF: 1-1/2 lbs. grass fed ground beef | 1-1/4 cups grated carrots (sauteed) | 1/3 cup finely | chopped onion (sauteed) | 1/4 cup finely chopped parsley | 1 large egg | 1/2 cup almond flour | 2 garlic cloves, minced and finely grated or wet | 1 tsp. sea salt | 1/2 tsp. mustard powder | 1/4 tsp. ground allspice | 1/4 tsp. black pepper

INGREDIENTS FOR SAUCE: 1 -1/2 cups tomato sauce | 2 Tbsp. coconut sugar | 2 Tbsp. molasses | 4 tsp. apple cider vinegar | 1 tsp. onion powder | 1/2 tsp. sea salt

DIRECTIONS FOR MEATLOAF:
Preheat the oven to 375 degrees | Line a loaf pan with parchment paper as smooth as possible | In a large bowl, combine all of the ingredients for the meatloaf until thoroughly mixed. Pack the mixture into a loaf pan tightly | Place a baking sheet over the loaf pan and flip the loaf pan so the meatloaf square is laying square in the center of the baking sheet. Meatloaf will slide out easily. Remove and discard the parchment paper | Bake in oven for 45 minutes.

DIRECTIONS FOR SAUCE:
While the meatloaf is baking, combine all of the ingredients for the sauce in a bowl | After the meatloaf has baked for 45 minutes, spread about ½ the sauce over the loaf (use extra sauce as side dish when serving the meal) | Return to the oven and bake for 10-15 minutes | Allow meatloaf to set for at least 15 minutes before serving.

  1. Very similar to our recipe, but we use oats instead of almond flour. We make extra and freeze it so thawed we have a fast meal.

    1. That is the best way to cook and serve, Nopew. I make double batches of a lot of things and freeze them in single serving containers so we always have something different to enjoy for a quick lunch and dinner.
