The fruity combination of apricot preserves, Dijon and thyme goes great with turkey or chicken and with Thanksgiving now behind us, this is a great recipe for all those leftovers and it’s also something the whole family will love. Use apricot preserves sweetened with juice instead of sugar to keep it healthy and you’ll find it not only delicious but also super easy to put together for a quick-lunch or on a busy morning when you’ve got little time to spare packing a lunch. Makes two large wraps.
1 Tbsp. fruit-sweetened apricot preserves
1 tsp. fresh thyme leaves
1 tsp. Dijon Mustard (for more spice use 1 Tbsp.)
6 oz. roasted turkey or chicken
4 large leaves romaine lettuce
2 slices of bacon
1 scallion, minced

1. For the sauce, combine the apricot preserves, thyme and Dijon in a small bowl and mix well.
2. Spoon about 1 to 2 teaspoons of the apricot mustard sauce on each wrap.
3. For each wrap, layer 3 ounces of turkey in a lettuce leaf and top with 1 slice of bacon, half of the scallion, and then cover with the second lettuce leaf then roll up, wrap it in a paper towel and tinfoil and you’re done. Repeat for the second wrap.
