Paleo Mini Meatloaves

If you have nut allergies, are gluten intolerant or feel better for simply not eating grains, you CAN eat these. They are super yummy! The coconut flour does not impart a coconut flavor. Also, you can use a mixture of beef, pork, turkey, veal, bison, etc. No matter which, these have a rich delicious flavor and a tender texture with the color of the vegetables popping through. Crockpot Stuffed Peppers


This traditional dish is great in the slow cooker and super delicious for a hearty meal all year round but especially on a cold winter night or in the summer when tomatoes and peppers are fresh from the garden and super sweet to eat. Add some homemade ketchup if you like or eat them straight from the crock-pot, either way you and your family will love them. Serves 6. Enjoy!

Lean Sloppy Joe


Everyone loves a tasty sloppy joe, even the pickiest of children will scarf down a sloppy Joe and ask for seconds, myself included because they are truly a treat for me.  I really enjoy them but I also want to feel good about what I’m eating and I want it to be healthy for my body. I want all the delicious, messy, sweetness of a sloppy joe minus the refined sugars, additives and the list of other ingredients found on labels that most of us can’t pronounce so I put together my own delightful recipe years ago and I’m craving today so now I’m sharing with you. I use gluten-free ingredients to keep things wholesome but feel free to use the name brand of your choice. You won’t be disappointed.
